2 Tbsp. Extra Virgin Olive Oil (EVOO)
4 garlic cloves, finely chopped
2 Tbsp. fresh lime juice
7-8 Tilapia Fillets, thawed if frozen
Course salt and ground pepper
* served on and with Black Bean tortillas & Corn and Tomato Salsa
Turn oven onto Broil. Line baking sheet with parchment paper and then cover with cooling rack(s). The rack(s) should cover the entire sheet. Spray these down with cooking spray. In a medium bowl, whisk together EVOO, garlic, and lime juice,salt & pepper. Add fish and turn once to coat; let sit 5 mins. Remove fish from marinade and place on prepared baking sheet. Broil in oven about 5-8 mins, flip when opaque color is gone, and then finish with another 5-8 mins on the other side. Run a fork across the fish to make sure the color is also gone in middle. The fish will fall away easily from itself when done!
