Roasted Sweet Red Pepper & Tomato Sauce
1 Jar Roasted Red (multi-color) Peppers (Trader Joe's)
2 tomatoes - cut into wedges, drizzled with olive oil /coarse salt & pepper. Roast at 425* until sunken and delicious:)
(we love the little Heirlooms from TJ's; if so, a handful will do the trick)
2 cloves garlic - coarsely chopped
4-6 Tbsp. fresh basil leaves (personal choice or depending on how children's noses turn up at the green in there food)
3-5 Tbsp. fresh oregano leaves (same as above :))
Kosher salt & pepper
Put all ingredients in food processor or blender. And salt& pepper to taste. Always the best when made with the warm, out of the oven tomatoes!
